Watermelon & Feta Salad with Fresh Basil

The 2013 Menu for Change potluck party recipe book makes an encore splash! This time with an easy-to-assemble dish that is perfect for a hot summer day, beach potluck party, family picnic or just a beautiful hike in the mountains. Kudos once again to Tracey Grant, RDN CWHC from Whole Daily Life.

Ingredients:

  • 1/2 watermelon, cut into cubes
  • 4 Roma tomatoes, cut into chunks
  • 1/2 C crumbled feta cheese
  • 1/3 C raw pistachio kernels, no shells
  • Handful of fresh basil, chopped
  • 2 pinches of salt
  • 1 Tbsp EVOO
  • 5 Tbsp balsamic vinegar (or balsamic reduction)

Directions:

Place watermelon cubes and tomato chunks in bottom of large serving dish.

Lightly sprinkle salt evenly over top.

Distribute feta and pistachios on tops of the melon and tomato mixture.

Drizzle olive oil and balsamic vinegar evenly over top.

Top off with chopped basil.

Serve and enjoy!
