So was Elsa in Frozen when she sang, “Let it go, let it go…”

It’s too easy to feel defeated when you don’t have the perfect ingredients for a meal.
Before you grab a bag of chips and a soda (ahem!), here’s a recent lunch for inspiration.

Tuna sandwich on whole wheat bread: canned tuna in olive oil mixed with chopped kale, chives, green onions, extra virgin olive oil, grainy mustard, balsamic vinegar, salt, mayo.
Cosmic Crisp apple slices.
Castelvetrano olives.
That’s it!
Don’t obsess over “eating the rainbow” or “eating clean” or “eating healthy” when that is just not always possible.
